Carrot Cupcakes


Not much to report today.  I am trying to figure out how we can be short of cash every single month.  We had a large group of ex-pat students at the shop for ice cream.  Apparently they were trying to tell the ladies that the ice cream tasted like gasoline, which it did.  The ice cream machine broke. 

I decided that I would attempt to make carrot cupcakes and sell them for 500rwf.  This is less than a US dollar.  I was able to get 20 out of a batch and we sold 11 by the end of the day, mostly to the ex-pats.  I am hoping we can sell the rest today; otherwise, I will have to buy all of them.  Since the carrot cakes are 200rwf more than the banana bread, I think many of the locals will stick with the usual.  Also, no one in Rwanda knows what carrot cake is.

I am hoping by the end of the day I will have a good set of books and can complete all the reports.  Next week is an organization week.  My goal is to have everything that is financial set up so it is easy to do.  Not sure if I can accomplish this, but it is worth the try.
